This week, French chef Paul Pairet of Ultraviolet and Mr and Mrs Bund in Shanghai discusses the beauty of eggs in a rapid-fire Q & A with Relaxnews.

Relaxnews: Why did you choose this ingredient?

Paul Pairet: They’re so versatile and there are so many textures to eggs. You can make it a full meal like an omelette, or a snack. I love eggs.

RN: What’s your favorite way to eat them?

PP: My favorite way to start the day is to fry eggs, sunnyside up. Melt some Comté cheese on top, place them on a bed of lardons [cut up bacon], and drizzle a bit of soy sauce.
